The article is devoted to traditional drinks that occupy a special position in ritual and ceremonial food of the Karachay and the Balkars. The drinks are studied not only from the point of view of the preparation technology, but also as an important element of culture reflecting human relationships in society and norms of behaviour. The autochthonous Caucasian ethnos – the Karachay-Balkars – absorbed all the best from the culture and customs of peoples that participated in their ethnogeny and preserve their ancient ethnic food skills in preparation of traditional drinks even at the present time. , . – , . , . - 325
