ANNOTATION.
The article is devoted the study of influence of different regulators of acidity
on physical and chemical, structural-mechanical and microstructure descriptions of
frappe pork. The effective is set influence on these properties of meat raw material
exactly of complex of phosphatic preparations, containing difosfaty sodium and
tripolifosfat sodium.
